Toffee Bars

Graham crackers, separated into fourths

2 sticks butter, not margarine

½ c. brown sugar

1 c. chopped pecans


Step 1: Preheat oven to 350°.

Step 2: Place graham crackers in 2 13 x 9 pans with sides touching, but not overlapping. Fill up all the spaces in the pans with crackers. You will have to break a few to get the pans full.

Step 3: Bring butter and sugar to a boil and boil for exactly 2 minutes, no longer.

Step 4: Remove from heat and pour over crackers.

Step 5: Use a spatula to spread mixture over all surfaces. Sprinkle with pecans.

Step 6: Bake for 10-12 minutes.


Remove from cookie sheet immediately and let cool on wax paper or parchment.


I start timing the boil when the mixture begins bubbling and can’t be stirred down. The timing is critical on this part. This might be the only recipe I actually follow. The crackers will look really gooey when you take them out of the oven, but they set up quickly.


Don’t make these unless you are dedicated because once you share them with family and friends, you will be expected to bring a double batch to every function!
