Roasted Sweet Potatoes

4 sweet potatoes
2 Tbls. olive oil
½ tsp. cinnamon
½ c. dried cranberries
½ c. chopped pecans
¼ c. maple syrup
Step 1: Preheat oven to 400°.
Step 2: Peel sweet potatoes and cut into ½-inch pieces.
Step 3: Toss with oil and cinnamon and spread onto a baking sheet.
Step 4: Roast for 25-30 minutes, stirring halfway through.
Step 5: Add cranberries and pecans the last 5 minutes of roasting.
Step 6: Remove from oven and drizzle with maple syrup, stirring to cover all surfaces.
I never cared much for sweet potatoes, but I run to the store at the beginning of autumn just to make this recipe. It is delicious. Feel free to adjust the measurements. You know I always do. I like more cinnamon, and I love more maple syrup. You can substitute brown sugar for the maple syrup, but add it to the oil and cinnamon at the beginning.
