Baked Zucchini

This is a good end-of-summer recipe because if you have a garden, you are probably looking for ways to get rid of all that zucchini. Your neighbors and co-workers still have that last batch you gave them.


Baked Zucchini


2 zucchini, sliced lengthwise into quarters

¼ c. grated Parmesan cheese

2 garlic cloves, minced

1 Tbls. oil (I use olive oil)

1 tsp. oregano

½ tsp. salt

¼ tsp. pepper


Preheat oven to 425°. Pull sliced zucchini in a bowl. Pour oil over slices and add garlic. Rub the garlic and oil all over the zucchini slices. Put the zucchini on a baking sheet skin side down. Sprinkle with cheese, oregano, salt and pepper. Bake for 15 minutes. Switch oven to broil and bake another 4 minutes, or until zucchini is brown.


This is super easy, and as they used to say in 1960’s TV ads: Clean-up’s a breeze!
